Bee bread is a food made from pollen fermented with enzymes, honey, and wax. It is the main source of nutrition for young bees. This food is highly nutritious, rich in B vitamins, phosphorus, and vitamin C.
Description
VISUAL ASPECT (color): Small compacted pellets, color varies depending on floral origin, usually brown, golden yellow, dark brown, or orange.
AROMA: Intense and natural, with floral, fermented, and slightly acidic notes.
TASTE (mouthfeel): Complex and balanced flavor. A sweet-acid profile predominates, characteristic of lactic fermentation. Floral, herbal notes and a slight final bitterness.
TOUCH: Granular texture at first, which becomes softer and creamier when chewed.
PRODUCT DEFINITION: Bee bread is a fermented food that bees create inside the hive from pollen, honey, nectar, and enzymes from their saliva, compacting it in the cells to feed the colony, especially the larvae. It is more nutritious and digestible than simple pollen due to its lactic fermentation process, which increases vitamins and amino acids.
PRODUCTION AREA: The entire Iberian Peninsula.
PRODUCTION SEASON: Spring and summer.

TECHNOLOGICAL TREATMENTS: Separation of wax and honeycomb.
